Calling all caterpillars! We’re welcoming Spring with this new recipe in honor of our collaboration with one of our most beloved children’s stories The Very Hungry Caterpillar™ by Eric Carle. This yummy meal is packed with lentils to represent the earthy garden where caterpillars roam, strawberries and carrots that the caterpillar eats at the beginning of the story, and kale to represent the one green leaf the caterpillar eats to soothe an aching belly.
