Fun fact: “Orzo” means barley in Italian, and mimics the shape of a single unprocessed grain of barley. Considered a staple in Italy, Greece and Turkey, it is traditionally used in soups, salads, and pilafs. In Turkey, orzo goes by the name “arpa şehriye,” which translates to “songbird tongue,” which is quite potent imagery for pasta! We have paired our orzo with a vegan “pesto,” chalked full of iron-rich spinach and leeks.
